Job Description

Akai Brussels, a high-end Japanese-Mediterranean fusion restaurant located on the 30th floor of the Cardo Hotel, is seeking an experienced Sushi Chef to join our culinary team. You will work alongside our Head Chef to create refined sushi and sashimi, showcasing premium ingredients and precise techniques. This is an opportunity to contribute to an elevated dining experience in one of Brussels’ most prestigious venues.

Requirements

2+ years of experience working as a Sushi Chef or in a professional sushi kitchen

Mastery of sushi preparation: rice cooking, fish cutting, whole tuna cutting, nigiri, sashimi, maki, and presentation techniques

Strong knowledge of product handling, freshness control, and respect for traditional Japanese methods

Clean, precise working habits and attention to detail in every plate

Team spirit and respect for kitchen hierarchy

Fluent in French or English (both are a plus)

Availability to work evenings, weekends, and holidays

Professionalism, discipline, and a positive attitude
